My favorite breakfast

My mom was asking for alternative idea's to my dad's 8 point Jimmy Dean breakfast sandwiches so I wanted to share what I eat every morning. I buy the egg whites/fake eggs in a carton and I cook a 1/2 cup in a small pan w/salt and pepper on top and pretty much cook it like a pancake and then cut it into fours pieces. I then eat 2 of the quarters and put the other two on a Thomas brand 100 calorie English Muffin w/Parkay Spray Butter and it's only 2 p0ints. Sometimes I use the Double Fiber English Muffin instead and it's 3 points. Since my dad gets more points a day he could possibly eat two (using the 2 extra quarters) and it would only be 4 pts. HALF of what his current sandwich is. It is VERY good!

  1. I typically try to skew my points toward earlier in the day, so I often allow myself 8 points for breakfast, making a sandwich similar to this. It consists of:
    - 1 egg (2 pts)
    - 1 double fiber English muffin (2 pts)
    - 1 TBSP light (pref. olive oil-based) mayo (1 pt)
    - 1 svg Canadian Bacon or turkey sausage (1 pt)

    That's 6 points. I sometimes throw on a slice of Havarti cheese for an extra 2 points.

    I like real eggs better, so I find it's worth the extra point.

    There are also now Bagel Thins and Sandwich Thins bread that I think are just one point -- it's less bread, but enough to put something between.

  2. Oh, but my favorite breakfast:

    - 2 Eggo Nutrigrain Lowfat Frozen Waffles (2 points)
    - 1/4 cup lite syrup (2 points)

    To skew towards breakfast, I'll often also throw on 2 TBSP reduced fat peanut butter (4 points)
